Asparagus & Pigeon with Cheese & Herb Dressing

Serves one, cooking time 40 mins


Ingredients (main)

4 asparagus spears

3 slices Roquefort cheese

1 pigeon breast

2 tbsp olive oil

Ingredients (dressing)

Parsley, handful

Chives, handful

Juice of 1 lemon


4 tbsp olive oil

1 clove garlic, crushed


Cook the asparagus in boiling water for 2-3 minutes until tender, then drain well

Arrange on plate and lay the cheese on top

Hot grill for 1-2 mins to melt the cheese

Pan fry the pigeon for 1-2 mins each side in the olive oil

Put all the herb dressing ingredients in a mini food processor and blitz until smooth

Slice the pigeon and serve with the asparagus

Drizzle with the herb dressing
